Whenever possible, 1908 sources its ingredients from producers in the nearby area. If certain products happen to come from further afield, even greater emphasis is placed on quality, sustainability, and fair production methods.
Head chef Stephan Zippl draws inspiration from the finest regional products and uses them as the foundation for his dishes. Through his intuition for flavors, texture, and sensory perception, he creates compositions aligned with his philosophy, characterized by four components: sweet, sour, spicy, and crispy. Each dish by Stephan Zippl reflects the local area and terroir, delightfully unifying the four components of the Re:vier cuisine. Restaurant 1908 has been awarded multiple times, notably earning 1 Star and the Green Star in the 2022 Michelin Guide.

Thanks to shorter delivery routes, increasing the organic component, conserving resources, and promoting biodiversity and animal welfare, the climate goal of reducing the CO2 footprint of the dining offerings from 360 to 180 tons of CO2 is most definitely achievable.
