Wine-making at the Prandtauerhof looks back on a long tradition. Wine was pressed more than 700 years ago In the former reading hall of St. Pölten Abbey. Some 14 hectares of vineyards are cultivated today, using traditional wine-growing techniques exclusively. Their outstanding vineyards include Achleiten, Vorderseiber, Weitenberg, Klaus and Kollmitz.
Top-quality grapes flourish on ground that is rocky, rich in minerals, but also calciferous and shaly. But it isn’t only the exceptional winegrowing conditions and focus on smaller grape harvests that are responsible for the uniqueness of these grapes. Temperature fluctuations caused by special climatic conditions and vineyards at different elevations result in an acidity that creates freshness and elegance.
The grape harvest, which is subject to stringent criteria, results in an exceptional quality of the ripe fruit and an intensive aroma. Winemaking – which encompasses the work conducted in the vineyards and in the cellars – is a craft which demands great sensitivity. The art of viniculture reflects personal philosophy. Through a combination of all these factors, Karl Holzapfel achieves wines with a unique identity.
Karl Holzapfel and his team take their carefully hand-harvested grapes and process them gently, employing innovative cellaring techniques. Gravity alone is used to fill the selected grape product into the press; the must, which is produced through gentle pressure, is briefly allowed to settle, then to ferment, partially in a temperature-controlled steel tank, allowing it to maintain its fruity aroma. After fermentation, the wine remains in contact with the wine yeast. This result is Steinfeder, Federspiel and Smaragd of a clear, delicate fruitiness, stylish with an optimal balance between minerality and freshness.
Karl Holzapfel strives to produce clear, fruitily fine wines for daily enjoyment, wines that are lively and rich in character, as well as dry and compact Smaragd wines with a complex play of aromas and great potential.
Their selection encompasses the Wachau’s unique Steinfeder, Federspiel and Smaragdqualities of Grüner Veltliner, Riesling, Weissburgunder, Zweigelt and Rosé varieties. The Hippolyt selection, named after the winery’s patron saint, impresses with its exceptional creaminess, elegance and finesse, reflecting the magic of the Wachau region.
